NAN'S GLAZED LEMON CAKE
SERVES 8-10
This is a favourite at Parchment Bakery. It takes me back... arriving as a young girl with my family to Cootamundra, NSW, late on Friday evening in winter to my Nan’s humble home. A small cosy weatherboard cottage filled with love and the sweet smell of Nan's thick curry and mash potatoes, always enough to feed as many mouths as possible who arrived at the kitchen table. With no fuss this lemon syrup cake was whipped up by Nan and served with lashings of tea from the crocheted tea cosied pot. Delicious as is or served with a dollop of thick cream. X
Self raising flour, ricotta, caster sugar, free range eggs, vegetable oil, lemon juice, icing sugar, lemon zest.
Our products are all hand made in our bakery where eggs, peanuts, sesame seeds, soy, tree nuts, milk, dairy and wheat or gluten are used, and consequently may contain or have traces of these allergens.
Cake is approximately 9.5 inches in diameter (245mm).
Best consumed within 3 days. Store airtight in a cool, dark place.
